ESPRESSO

Espresso
Espresso is coffee that is extracted by applying high pressure using an espresso machine. If it can be extracted well, it has a good balance of acidity and bitterness, and you can enjoy a rich taste and it can also be used for various arranged drinks.
CHAMI espresso
The characteristic of CHAMI's espresso is that it is packed with umami that has a good balance of acidity and bitterness. You can feel the bittersweetness of roasted almonds in the aftertaste. In addition, it goes well with sugar, and adding sugar increases the richness and gives you a flavor like charred caramel.

What is drip coffee (pour over)?
A style of coffee that is extracted by pouring hot water into ground beans using an equipment called a dripper. Even with the same beans and recipes, not only can the flavor change just by changing the filter to paper, metal, cloth, etc., but the taste also changes depending on the temperature of the hot water, the amount of hot water, and the grind level of the beans.

Depending on the type of beans, we change the grind level to suit for each green beans charactor. And we make a drip coffee recipe suitable for the beans. Our recipes care for the clear taste and long-lasting aftertaste.

COFFEE ROASTING
Roasting Coffee
Roasting is the process of heating coffee beans from the state of raw beans (green beans) to make brown beans, as we normally call coffee beans. Generally, the degree of roasting is roughly divided into three types: light roast, medium roast, and deep roast. We won't go into the details here, but the rough features are that the light roast is refreshingly fruity, the medium roast has a balanced sweetness, and the deep roast is rich.
CHAMI Roasting Coffee
We determine the roasting profile by pursuing the degree of roasting that maximizes the deliciousness of the beans according to the characteristics of coffee beans, or green beans. We roast with caring of whether the beans are delicious for hand drip, delicious for latte, suitable for blend coffee, and what to pair with when enjoying the coffee.

COFFEE GREEN BEAN

CHAMI, we have specialty coffee. Specialty coffee is the green beans that are properly cultivated, harvested, produced, sorted, and quality-controlled in the country of origin, and that contain very little defective beans. Proper extraction is required to express the characteristic and wonderful flavor characteristics of the production area. In addition, as a method of distinguishing from ordinary coffee, the cup quality is evaluated based on the cup evaluation standard of COE (Cup of Excellence), and coffee that exceeds the standard is regarded as specialty coffee.
